Here is my very own recipe for a healthier chocolate chip or oatmeal raisin cookie. They are nutritious and yummy, seriously, they taste pretty delicious.
Basic Dough
Combine Dry Ingredients - set aside
3/4 cup unbleached flour
2 cups oat flour (or grind your own with a food processor)
1/2 cup ground flax seed
1 tsp. baking soda
1 tsp. sea salt
Blend together until flluffy
1/2 cup margarine (or Smart Balance)
1/4 cup butter
1/2 cup sugar
3/4 cup packed brown sugar
Now add
4 oz. apple sauce
1 egg
3 tbs. milk or soy milk
1 tsp. vanilla
Mix dry ingredients with butter and sugar
For Chocolate chip cookies add a bag of chocolate chips
For Oatmeal Raisin cookies add 1 cup raisins, 1 teaspoon cinamon and 1/2 cup nuts (optional) Or do like I do and make both - Divide dough in half and put chocolate chips in half and raisins and cimamon in the other half.
Bake on parchment paper for 350 degrees for 10 - 12 minutes Enjoy!
